KESAR KULFI

Kesar kulfi is a popular Indian frozen dessert that is flavoured with saffron (kesar) and cardamom. It’s a rich and creamy treat with a distinctive taste. Here’s a basic recipe for making kesar kulfi at home:

Ingredients:

~ 1 litre full-fat milk

~ 1/2 cup sugar (adjust to taste)

~ 1/4 cup condensed milk

~ 1/2 cup milk powder

~ 1/2 teaspoon cardamom powder

~ A pinch of saffron strands (kesar), soaked in 1 tablespoon warm milk

~ Chopped nuts (like almonds and pistachios) for garnish

Instructions:

1.  In a heavy-bottomed pan, bring the milk to a boil. Stir continuously to prevent the milk from sticking to the  bottom of the pan.

2. Once the milk comes to a boil, reduce the heat to low and let it simmer. Keep stirring occasionally to prevent a skin from forming on the surface.

3. Add sugar to the simmering milk and continue to stir. Allow the milk to reduce to about half its original quantity.

4. Add condensed milk and milk powder to the reduced milk. Mix well to combine.

5. Add cardamom powder and the saffron-soaked milk to the mixture. Continue to simmer and stir until the  mixture thickens to a custard-like consistency.

6. Allow the kulfi mixture to cool to room temperature.

7. Pour the kulfi mixture into kulfi moulds or small individual serving containers.

8. Garnish with chopped nuts on top of each kulfi.

9. Place the moulds or containers in the freezer for at least 6 hours or overnight until the kulfi sets completely.

10. Once the kesar kulfi is set, remove it from the moulds, and it’s ready to be served.
