“Saffron Burfi,” a rich and delicious sweet treat:
Ingredients:
~ 1 cup khoya (mawa) – crumbled
~ 1 cup sugar
~ A pinch of saffron strands (kesar), soaked in warm milk
~ 1/2 teaspoon cardamom powder
~ 2 tablespoons ghee (clarified butter)
~ Chopped nuts for garnish (almonds, pistachios)
Instructions:
1. In a non-stick pan, heat ghee over medium heat.
2. Add crumbled khoya to the pan and stir continuously.
3. Cook the khoya until it starts to release ghee and becomes slightly brown.
4. Add sugar to the khoya and continue stirring.
5. Continue cooking on medium heat until the mixture thickens and leaves the sides of the pan.
6. Add the saffron-soaked milk and cardamom powder. Mix well to incorporate the saffron flavor.
7. Keep stirring until the mixture reaches a dough-like consistency.
8. Remove the pan from heat and let the mixture cool for a few minutes.
9. Grease a plate or tray with ghee and spread the mixture evenly on it.
10. Allow it to cool completely, and then cut it into square or diamond-shaped pieces.
11. Garnish with chopped nuts.
12. Your saffron burfi is ready to be enjoyed!
