KESAR AAMRAS

Kesar Aamras is a delightful and fragrant Indian mango puree infused with saffron (kesar). It’s a popular seasonal treat enjoyed during the mango season. Here’s a simple recipe for making Kesar Aamras:

Ingredients:

~ Ripe mangoes – 3 to 4 medium-sized (Alphonso or any other sweet and ripe variety)

~ Saffron strands (Kesar) – a pinch

~ Sugar – 2 to 3 tablespoons (adjust to taste)

~ Cardamom powder – 1/2 teaspoon (optional)

~ Chilled milk or water – 1/4 cup (optional)

Instructions:

 1. Peel and dice the ripe mangoes. Remove the seeds and discard them.Place the mango pieces in a blender or  food processor.Add a pinch of saffron strands to the mango pieces. If the saffron strands are not already crushed, you can crush them between your fingers before adding them to enhance the flavour and colour. 

2. Blend the mango and saffron together until you get a smooth puree. If needed, you can add a little chilled milk or water to help with the blending process.

3. Add sugar to the mango puree and blend again until the sugar is fully dissolved. Adjust the sugar quantity according to your taste and the sweetness of the mangoes.

4. If you like, you can add a touch of cardamom powder for additional flavor. Blend briefly to combine.

5. Transfer the Kesar Aamras to a serving bowl.

6. Chill the Aamras in the refrigerator for at least 1-2 hours before serving.

7. Serve the chilled Kesar Aamras as a dessert or side dish. It pairs well with puris or can be enjoyed on its own.

This sweet and saffron-infused mango puree is not only delicious but also a refreshing way to enjoy the flavour’s of ripe mangoes during the summer season.
