Ingredients:

~ 4 cups whole milk

Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.
2. Drain the soaked rice and grind it to a coarse paste using a blender or food processor. Add a little water if needed.
3. In a heavy-bottomed pan, heat the whole milk over medium heat. Bring it to a boil and then reduce the heat to simmer.
4. Add the ground rice paste to the simmering milk, stirring continuously to avoid lumps.
5. Keep stirring the mixture and cook on low heat until the rice is completely cooked and the mixture thickens. This may take around 20-25 minutes.
6. Add sugar to the rice-milk mixture and continue to cook, stirring continuously, until the sugar dissolves and the phirni reaches a creamy consistency.
7. Add the saffron-soaked milk and cardamom powder. Stir well to incorporate the saffron and cardamom flavors.
8. Continue to cook for an additional 5-7 minutes until the phirni thickens further.
9. Remove the phirni from heat and let it cool to room temperature.
10. Once the phirni is cool, refrigerate it for at least 2 hours to chill.
11. Garnish the Phirni Kesar Di with chopped nuts and, if desired, edible silver leaf.
12. Serve the chilled Phirni Kesar Di in individual bowls and enjoy the rich and aromatic flavors.
