Saffron halwa is a rich and flavorful Indian dessert made with semolina (sooji or rava), ghee (clarified butter), sugar, and of course, saffron. It’s a delightful treat often prepared during festivals and special occasions. Here’s a basic recipe for making saffron halwa:
Ingredients:
~ 1 cup semolina (sooji or rava)
~ 1/2 cup ghee (clarified butter)
~ 1 cup sugar
~ 2 cups water
~ A pinch of saffron strands (kesar), soaked in 1-2 tablespoons warm milk
~ 1/4 cup chopped nuts (almonds, cashews, pistachios)
~ 1/2 teaspoon cardamom powder
~ A few strands of saffron for garnish (optional)
Instructions:
1. In a heavy-bottomed pan or kadai, heat ghee over medium heat.
2. Add semolina (sooji) to the hot ghee and roast it on low to medium flame until it turns golden brown. Stir continuously to avoid burning.
3. While the semolina is roasting, in another saucepan, heat water. Once it comes to a boil, add sugar to make a sugar syrup. Stir until the sugar dissolves completely.
4. Once the semolina is roasted, carefully add the sugar syrup to it. Be cautious, as it might splutter.
5. Mix well to avoid lumps. Keep stirring to ensure that the semolina absorbs the sugar syrup.
6. Add the saffron-soaked milk to the mixture. Continue stirring to incorporate the saffron flavor and color into the halwa.
7. Add chopped nuts and cardamom powder. Keep stirring as the halwa thickens.
8. Cook until the halwa starts leaving the sides of the pan and becomes a cohesive mass.
9. Remove the saffron halwa from heat.
10. Optionally, garnish with a few strands of saffron on top.
11. Serve the saffron halwa warm, and enjoy the rich and aromatic flavors.
Saffron halwa is a delightful dessert that can be enjoyed on its own or paired with a scoop of vanilla ice cream for an extra indulgence. It’s a perfect sweet treat for celebrations or special occasions.
