SAFFRON LASSI

Saffron lassi is a refreshing and aromatic beverage that combines the richness of yogurt with the unique flavour and colour of saffron. Here’s a simple recipe for making saffron lassi:

Ingredients:

~ 1 cup plain yogurt (preferably chilled)

~ 1/2 cup cold water

~ A pinch of saffron strands (kesar)

~ 2-3 tablespoons sugar (adjust to taste)

~ 1/2 teaspoon cardamom powder

~ Crushed ice (optional)

~ Chopped nuts for garnish (such as almonds or pistachios)

Instructions:

1.  In a small bowl, add a pinch of saffron strands to 1-2 tablespoons of warm milk. Allow the saffron to soak and release its flavour and colour. This step is crucial to infuse the saffron into the lassi.

2. In a blender, combine the plain yogurt, cold water, saffron-infused milk, sugar, and cardamom powder.

3. Blend the ingredients until you get a smooth and frothy mixture.

4. Taste the lassi and adjust the sugar according to your preference.

5. If you prefer a thicker consistency, you can add more yogurt, and if you prefer a thinner consistency, you can add more cold water.

6. Optionally, add crushed ice to make the lassi extra refreshing.

7. Pour the saffron lassi into glasses.

8. Garnish with chopped nuts, such as almonds or pistachios, on top.

9. Serve the saffron lassi immediately while it’s chilled and enjoy the delightful combination of saffron, yogurt, and cardamom.
